• 500ml soya milk (sweetened)
  • 2 tsp cider vinegar
  • 360g plain flour
  • 50g cornflour
  • 2 tsp baking powder
  • 1 tsp bicarbonate of soda
  • 450g caster sugar
  • 160ml sunflower oil
  • 4 tsp vanilla extract

Pre-heat the oven to 180degrees and line a cupcake baking tray with cupcake cases

In a spacious bowl, add all the dry ingredients and mix with a whisk.

In a separate bowl, add the soya mik. Now add the cider vinegar to it.  Leave for 5 minutes until it thickens. Now add the oil and vanilla extract.

Mix the wet ingredients to the dry, whisk till lump free but don’t over whisk.

spoon the mixture into the readied cupcake cases (fill 2/3rds) and bake for 15 minutes till done or insert a toothpick into one cupcake to test, if it comes out clean then the cupcake is done
